Let's take a closer look at each producer and the sakes we will be pouring: Wakaze - Classic, Yuzu & Nigori: Wakaze is a trailblazing sake producer located in the heart of Paris, where tradition meets innovation. Committed to sourcing the finest rice and employing age-old brewing techniques combined with contemporary practices, Wakaze has captured the essence of Japanese culture in every bottle. Back in the Jurassic era, as a young man, I used to love drinking sake. We thought of sake as "rice Wine." My wife, a stewardess with Pan Am, introduced me to sake. We would enjoy it with sushi and on our frequent trips with friends to Benihana's. Nowadays, I usually stick to bourbon or rye-but I am planning on attending the tasting this Sunday. CF Sharp MD
