INGREDIENTS
1/4 cup chia seeds
1 cup liquid (unsweetened milk, coconut milk, or water)
Pinch Sea salt
1/2 teaspoon vanilla extract
Several dashes of cinnamon
Couple dashes of nutmeg
Optional 1/2 teaspoon honey
Topping ideas: Coconut Yogurt, Berries, Nuts, Cinnamon, Nut Butters, Coconut Flakes, Pumpkin Seeds.
METHOD
Pour first 6 ingredients (not honey or toppings) into a jar and mix well. Let settle for 2-3 minutes then mix again very well until you see no clumping.
Cover the jar and store in fridge overnight or for at least two hours.
When you are ready to eat it, top with yogurt, your favorite fruit toppings and enjoy!
